This time I quartered the tomatillos, tossed them with several cloves of garlic, canola oil and salt, and roasted at 325 in a convection oven for about 45 minutes.

This is contrary to yours and every other recipe google offers for &quot;roasted tomatillos&quot;, all of which instruct to broil for a few minutes, turning once. Perhaps there&#039;s a bit of internet recipe incest going on? I&#039;ll find out if &quot;my way&quot; is a palatable alternative when I finish up the salsa tonight.</description>

Thanks to Jack Bishop, I&#039;m a fan of roasting the tomatillos AND peppers in the toaster oven at 450F: place whole (husk and rinse the tomatillos) on a baking sheet, turning once, until lightly browned and tender, about 30 mins. Remove stems. Dump everything including juices (could deglaze with lime here -- good idea!) into the food processor with salt + cilantro.
