The authenticity of the recipe for the Insalata Caprese, along with comments on how things should be just kept simple and true to the original good and few ingredients, makes me think that there is still hope for this Country! Glad to see that it is your recipe of choice. However, there IS one “americanization” that I would endorse: I fell in love with local heirloom tomatoes, and they are absolutely a good fit here.
